Beretta Organic Farms is a family-operated farm using no chemicals, genetically modified organisms, or artificial fertilizers in its cropping. No antibiotics or growth promoters are used in raising their livestock. They do all their own cutting and wrapping, smoking, sausage making etc.

Join them for a winter sleigh ride, the spring barn dance and more; if keen to get involved, and have two weeks to spare, volunteer; three months or more: apprentice!

Our chocolate is a symbolic invitation to take part in an alternative food system which promotes ecology, ethical trade and conviviality above the bottom line of economy. Come taste our unique blend of chocolate foods, coffee, drinking chocolate and organic dry goods and find inspiration in a flourishing slow-food community initiative.

ChocoSol 2010:

ChocoSol’s momentum continues to build and our community grows as we set and overcome stepping stones to make our ongoing enterprise evolve and adapt to the changing tides. This summer we launched the Tortilla Project, a local food initiative blending traditional food preparation techniques and traditions from Mesoamerica, while using local heirloom corn, produce and cheese from Ontario. We were extremely happy to bike this initiative to the markets of Toronto and look forward to continuing the progression and education of these foods and processing techniques. ChocoSol has also adopted some land in Prince Edward county where we hope to set up a flourishing Milpa next year to grow the veggies for the Tortilla Project.

Also on the horizon is our zero-waste, off-grid container factory. We are working with some amazing machinist and eco-technicos to create a mobile and dynamic chocolate production facility built within a shipping container. These projects amongst many have been brewing in Michael Sacco’s thoughts for a long time and through our shared inspiration and hard work, these ideas are starting to bare fruit.

This year we were able to send Chrystal our Kitchen Ninja and educator to Terra Madre in Italy, and in January 2011 four Toronto ChocoSolistas; Michael, Mathieu, Gabriela and Ivan will be doing work in Mexico to spend some time with the artisan and producer communities.
